Our paths crossed at the Miami Film Festival, where we were selected to provide top-notch proteins for a high-end dinner celebrating the acclaimed movie "The Taste of Things." This gathering sparked a burst of creativity, leading to the inception of this special BBQ sauce.

ABOUT ESTRELLA DAMM: THE BEER OF BARCELONA

Esteemed as Spain's signature brew and famously dubbed the "Beer of Barcelona," this iconic beverage commands a dominant 75% market share in Barcelona and its neighboring regions. Crafted by the same masterminds behind Inedit, this Pale Lager stands out with its extraordinary flavor and smoothness, proudly associated with Ferran Adrià, a globally celebrated, award-winning chef.

WHO IS CHEF CHUCHO ROJAS?

Chef Chucho Rojas is a distinguished Venezuelan chef whose culinary journey is marked by a blend of cultural influences and a commitment to healthy eating. His formative years were shaped by early culinary guidance at the age of nine, which was further honed at the prestigious Gregoire Ferrandi school in Paris.  He also worked as a researcher for the French Academy of Sciences under the direction of Hervé This. 

His professional career spans directing notable restaurants, including several Michelin-rated restaurants in Paris, including Au Cocodrille, La Vieille Enseigne and Serge & Co.

Chucho was recently one of the Chefs working behind the scenes with up-and-coming chefs at Master Chef for Latin America. He has led various projects, including directing large restaurants, implementing nutritional programs, and offering consultation for the creation of new gastronomic spaces​.

 

Ingredients: The sauce is composed of tomato concentrate derived from red ripe tomatoes, distilled vinegar, high fructose corn syrup, regular corn syrup, and salt for seasoning. It includes a blend of spice, onion powder, and natural flavoring. The unique beer component is made from water, barley, and hops. To add depth, it features brown sugar, apple cider vinegar, and Worcestershire sauce, which contains distilled white vinegar, anchovies, garlic, molasses, onions, salt, sugar, water, chili pepper extract, cloves, natural flavorings, and tamarind extract. The sauce is further enriched with mustard made from water, vinegar, mustard seed, salt, white wine, fruit pectin, citric acid, tartaric acid, sugar, and spice. The flavor profile is rounded out with paprika, garlic powder, onion powder, ground black pepper, more paprika, cayenne pepper, and additional salt.
