Black Sesame Seed Oatmeal Cookies
Makes 2 Dozen Cookies
Preheat oven to 375 degrees F. Mix together ½ cup softened coconut ghee, ½ cup dark brown sugar or grated jaggery, 1 egg and 1 teaspoon vanilla extract. Separately, mix 1 cup whole wheat or unbleached white flour, ¾ teaspoon baking powder, ¼ teaspoon salt, 1 cup organic black sesame seeds and 1¼ cups quick-cooking rolled oats. Add to ghee and sugar mixture, stirring until completely combined. Drop by rounded tablespoonfuls onto parchment-lined cookie sheets. Bake 10-12 minutes. Cool on wire racks.
