Buckwheat with Herbs
4-6 Servings
Toast 1 cup whole organic buckwheat groats in a dry skillet for 3 minutes, stirring constantly. Add 1 tablespoon olive oil or ghee along with ½ cup thinly sliced onions. Sauté for 3 more minutes; add salt to taste along with 2 cups water or broth. Bring to boil; reduce heat to simmer for 20 minutes or until liquid is absorbed. Remove from heat; let it sit, covered, for an additional 5 minutes. Garnish with fresh herbs such as parsley, chives, or thyme before serving.
