Beet juice is one of the most studied functional foods in sports nutrition and cardiovascular research, primarily because of its exceptionally high dietary nitrate content (~400–500mg per 8 oz serving). Dietary nitrates from beets are reduced to nitrite by oral bacteria, then converted to nitric oxide (NO) in the stomach and tissues — a potent vasodilator that relaxes arterial smooth muscle, improves blood flow, and lowers blood pressure. Clinical studies have documented 3–5 mmHg reductions in systolic blood pressure with regular beet juice consumption. For athletes, the nitric oxide pathway reduces the oxygen cost of exercise (VO₂ for a given workload), increasing mitochondrial efficiency and extending time-to-exhaustion. Beets also contain betalains — a unique class of water-soluble antioxidant pigments (betacyanins give the red/purple color; betaxanthins produce yellow/orange tones) found in very few plants. R.W.
