Ingredients

2 heads black garlic, minced
1 cup assorted gourmet mushrooms (such as shiitake, oyster, or porcini), chopped
1 1/2 cups Arborio rice
4 cups chicken or vegetable broth
1/2 cup white wine
1/2 cup grated Parmesan cheese
2 tablespoons butter
1 small onion, finely chopped
2 cloves garlic, minced
Salt and pepper to taste
Fresh parsley for garnish

Directions

In a large saucepan, heat the broth and keep warm over low heat.
In a separate large skillet, melt 1 tablespoon of butter and sauté the onion and garlic until softened.
Add the rice to the skillet and toast for 2-3 minutes.
Deglaze the skillet with white wine, stirring until absorbed.
Begin adding the warm broth to the skillet, one ladle at a time, stirring constantly until the liquid is absorbed before adding more.
Continue this process until the rice is creamy and al dente.
Stir in the minced black garlic, chopped mushrooms, Parmesan cheese, and remaining butter.
Season with salt and pepper to taste.
Serve the risotto hot, garnished with fresh parsley leaves.
