  • There aren’t many gastronomic inventions we can precisely place in time and space, but to witness the birth of one of the most famous and beloved pasta shapes, we would simply need to set our time machine to Genova, in 1865.

    There, we would witness the patenting of a special tool designed to cut pasta diagonally without deforming it. Staying nearby, we might even catch the moment when someone—perhaps the inventor himself, Giovanni Battista Capurro—noticed the pasta’s resemblance to the nib of a fountain pen (in Italian called “pennino”) and named it “penne”.
