Hilba Seeds - Ground
Hilba or hilbeh is both a name for fenugreek seeds as well as the name for a Yemenite condiment.
The flavor of fenugreek seeds can be bitter by itself but when cooked into a dish it adds a slightly nutty sweetness similar to notes of burnt sugar or maple syrup.
It pairs wonderfully with onion, ginger, cumin, and cardamom. Add it to dry meat rubs or use it to season roasted vegetables.
