The Story
Born in 1990, Prima Donna is essentially Gouda crafted with starter cultures typically used in northern Italy. Those cultures yield a sweeter, more nuanced cheese than you'd find in a traditional Dutch Gouda. The makers continue to refine their craft — most recently in 2022, when they transitioned to a microbial rennet, making Prima Donna suitable for vegetarians.
Usage
Slice thin for a charcuterie board, shave over pasta or risotto, or melt into a grilled cheese for a touch of Italian-Dutch magic. Pairs beautifully with prosciutto, fig jam, and a crisp Pinot Grigio or light-bodied red.
