The honey is raw and unfiltered, meaning it retains the natural enzymes added by honeybees during nectar processing, along with its original pollen content. Because the pollen remains intact, the honey can be traced to floral sources through pollen analysis. This is in contrast to many grocery store “Grade A” honeys, which are typically ultra-filtered and stripped of pollen.
