German Winter Thyme is a hardy perennial herb celebrated for its bold, savory aroma and culinary versatility. This variety produces small, dark green leaves that are packed with flavor, making them perfect for seasoning soups, roasts, sauces, and marinades. Thriving in full sun and well-draining soil, German Winter Thyme is drought-tolerant and frost-hardy, providing a reliable supply of fresh or dried leaves year-round. The compact plants grow to about 8-12 inches tall, making them ideal for herb gardens, borders, or containers. In summer, the plants produce small purple flowers that attract bees and other beneficial pollinators, adding ornamental value to your garden. Regular harvesting of leaves encourages fresh growth and ensures continuous flavor throughout the growing season. German Winter Thyme is low-maintenance and highly adaptable, making it a favorite for beginner and experienced gardeners alike. Whether you’re growing it for its culinary uses, aromatic qualities, or pollinator-friendly nature, this thyme variety is an essential addition to any garden.

Thyme - German Winter - Thymus vulgaris

Hardy Perennial Short, compact, aromatic herb. This winter hardy variety has attractive tiny lavender flowers. Thyme is known to deter cabbage worms. It's aromatic leaves are used in sauces, soups, and stews. It is great seasoning for poultry and fish, and adds just the right amount of zest to salads.

Did You Know? Thyme has been used medicinally for centuries to treat certain parasites and a broad range of respiratory ailments.

Soil & Water: Thyme can grow in most soils, but performs best in well-drained soil with moderate nutrients. Soil which is too rich will cause the plant to get leggy and lose its compact shape.

Planting & Growing: Start seeds indoors 6-8 weeks before the last frost. Lightly pinch developing plants to encourage bushiness. Sow seed directly 2-3 weeks before the last frost. Thyme also thrives as a potted plant.

Harvesting & Storage: Harvest leaves when the plant is large enough. Use fresh leaves, or dry and store leaves in an airtight container. Thyme also keeps well frozen.
