Before ripening, the bananas are an icy blue-silver color—turning pale yellow when mature. The flesh is soft, sweet, and reminiscent of vanilla custard or soft serve, making it ideal for smoothies, frozen treats, or eating fresh right off the stalk.

Blue Java grows as a fast-maturing banana tree, reaching 12–20 feet tall with wide, wind-resistant leaves. It’s cold-hardy for a banana, tolerating temperatures down to the mid-20s (°F) once established. It thrives in Zones 8b–11 and is one of the few bananas suitable for growers in warmer subtropical areas, not just the tropics.
