Fresh Hatch Red Chile

Every pod we ship is from the current year's crop, picked the same week it goes in your box. Availability changes with the harvest, and the 25 lb. size in particular can sell out before the season ends. Check the current product options before ordering. Once we're done harvesting and selling fresh in late October, we move to frozen, roasted, and red chile sauce for the rest of the year.

Fresh Hatch Red Chile is available in a medium heat level and shipped right to your door. Our chile is picked and shipped the same day so that it gets to you as fresh as possible. From our farms to your table, a piece of the Land of Enchantment.

Big Jim and Charger are two of our most famous varieties and a favorite for red chile. The hearty pods are perfect for making your own red sauce or roasting and freezing. When will fresh Hatch red chile be available this season?

When are specific varieties like Big Jim available?
Big Jim and Charger are our two main varieties for fresh red. Both ripen on the same late-September-to-October window and ship as a mix in your order — we don't separate them by variety.
