Olive names usually tell you where the olive comes from, and where it comes from tells you most of what it will taste like. Use this chart to match the olive to the board, the bar or the recipe.

Three olives cover most tables: one green and mild (Castelvetrano or Cerignola), one dark and rich (Kalamata), and one stuffed or marinated for color. Add capers, a tapenade for crostini and a few cheeses, and the board is done.
Cocktail olives should be firm enough to skewer and hold up in a cold glass. Pimento and blue cheese stuffed olives are the classic martini garnish, and olive brine is the base of a dirty martini. Cerignola works when you want one large olive per drink.
Add olives late to hot dishes so they keep their texture. Kalamata and oil-cured olives stand up to tomato sauces and braises, while Castelvetrano and green olives are better in bright, citrusy dishes and salads. Chopped olive salad is the heart of a New Orleans muffuletta. Finish with good extra virgin olive oil.

Mix one mild green olive such as Castelvetrano or Cerignola, one rich dark olive such as Kalamata, and one stuffed or marinated olive for color. That covers every palate at the table.
Mostly ripeness. Green olives are picked before they fully ripen and taste firmer and brighter; black olives are left on the tree longer, so they are softer and richer. Curing method changes the flavor further.
They are mild, buttery and much less salty than most olives, with a bright green color. People who say they don't like olives often like Castelvetranos.
Keep them refrigerated and fully covered in their brine or oil, and use a clean utensil each time. Olives that dry out above the brine line lose texture first.
