How chefs use it

Build beurre blanc and hollandaise reductions, deglaze pans for chicken and fish, dress delicate greens and shaved fennel, quick-pickle shallots and cucumbers, and finish seafood ceviche or oysters with a mignonette. Its wine character pairs with tarragon, chive, Dijon and good olive oil, and it will not stain pale sauces or salads.

Storage

Vinegar is shelf-stable. Keep it capped at room temperature away from direct light.
