VALRHONA EQUITORIAL 55 FEVE

Valrhona Equatoriale Noire 55% feves: everyday dark couverture in bulk

Valrhona Equatoriale Noire 55% is Valrhona's workhorse dark couverture, sold here as feves in a 3 kg bag or a 3 x 3 kg case. Pastry shops, chocolatiers, restaurants and ice cream makers use it when they want Valrhona consistency for high-volume ganache, enrobing, molding, mousse and baking at a lower cost than the Grand Cru range.

At 55% cacao it has a round, balanced cocoa flavor with mild bitterness, so it works for customers who find 64% and 70% dark chocolate too intense. Temper it for shells and bonbons, melt it into cream for ganache and glazes, or chop the feves as a chip substitute in cookies and brownies. Store sealed, cool and dry, away from strong odors.

Pairs with Valrhona Jivara 40% milk and Ivoire 35% white feves for a three-chocolate program, or with Callebaut 811 if you need a second dark couverture at a different price point. Ships nationwide from our Brockton, MA warehouse; free local delivery on qualifying orders across Eastern Massachusetts and New England.
