Prova Gourmet ground vanilla bean powder

Prova Gourmet Bourbon Madagascar Vanilla Bean Powder is whole vanilla beans ground to a fine powder, with no sugar, alcohol or carrier added. It comes in a 200 g tin for pastry kitchens and chocolatiers and a 50 g pack for smaller batches.

Why chefs use powder instead of extract

Because there is no alcohol to flash off, the flavor survives high-heat baking, caramel and roasting. It disperses evenly in dry mixes, sugar, chocolate and fat-based recipes where a liquid extract would seize or separate, and it shows visible vanilla specks in custard, ice cream, panna cotta and buttercream. A small amount goes far; start with a quarter teaspoon per quart of custard base and adjust.

Storage

Keep the tin closed in a cool, dark cupboard. Vanilla powder holds its aroma for a long time when kept away from heat and light.
