There's a regulatory nuance most consumers don't know: almonds grown in California (which produces over 80% of the world's supply) are legally required to be pasteurized before sale as "raw" — most commonly through propylene oxide (PPO) fumigation, a chemical the EPA classifies as a probable human carcinogen. California almonds treated with PPO are still legally labeled "raw" because the mandate applies to the process, not the label.
