Chocolate and heat are not friends.
We adore chocolate. We've built our entire business around sourcing the finest chocolate in the world and getting it to you. But summer has a way of reminding us that cocoa butter has opinions about temperature — and those opinions can show up at your door looking a little... rough.
If your chocolate arrived melted, soft, streaky, or coated in a white or grayish haze, first: take a breath. Your chocolate is completely fine. It hasn't gone bad. It hasn't lost its flavor. It just needs a little TLC — and that's exactly what this guide is for.
We're going to walk you through everything you need to know to rescue your chocolate and bring it back to glossy, snappy, beautiful form using a technique called tempering. It's what professional chocolatiers do every single day, and with a thermometer and a little patience, you can do it too.
What Happened to My Chocolate?
Melted Chocolate
When chocolate is exposed to temperatures above roughly 85–90°F (29–32°C), the cocoa butter begins to melt. If it then re-solidifies without being properly tempered, it can result in a soft, crumbly, or unevenly textured bar.
Chocolate Bloom
Bloom is the white or grayish streaky coating you may see on the surface of your chocolate. There are two types:

Fat bloom — caused by heat. Cocoa butter separates and rises to the surface as the chocolate cools unevenly. This is the most common result of heat exposure in transit.

Sugar bloom — caused by moisture. Sugar crystals migrate to the surface when chocolate is exposed to humidity or condensation.
In both cases, the chocolate is completely safe to eat and cook with. Bloom affects appearance and texture, not flavor or food safety.
The Solution: Tempering Your Chocolate
Tempering is the process of carefully melting and cooling chocolate to stabilize the cocoa butter crystals. Properly tempered chocolate has a glossy finish, a satisfying snap, and melts smoothly on the palate. It's the same process professional chocolatiers use every day.
You don't need professional equipment to do this at home — just a little patience and a thermometer.
What You'll Need
- Your bloomed or re-solidified chocolate
- A heatproof bowl
- A saucepan (for double boiler method) or a microwave
- An instant-read or candy thermometer
- A silicone spatula
- A clean, dry marble slab or baking sheet (optional, for tabling method)
Tempering Methods
Method 1: Seeding (Easiest for Home Use)
This is the most reliable method for home tempering and requires no special equipment beyond a thermometer.

Chop your chocolate finely and evenly. Set aside about 25–30% of it.

Melt the larger portion using a double boiler or microwave in 20–30 second bursts, stirring between each interval. Target temperatures:
- Dark chocolate: 115–120°F (46–49°C)
- Milk chocolate: 105–110°F (40–43°C)
- White chocolate: 100–105°F (37–40°C)

Remove from heat and add the reserved chopped chocolate (the "seed"). Stir continuously until fully melted and the temperature drops:
- Dark chocolate: 88–90°F (31–32°C)
- Milk chocolate: 84–86°F (29–30°C)
- White chocolate: 82–84°F (28–29°C)

Test your temper by spreading a small amount on parchment paper. It should set within 3–5 minutes at room temperature with a glossy finish. If it streaks or stays soft, continue stirring and cooling slightly.

Use immediately for molding, dipping, or enrobing — or pour into a lined pan to re-set as a solid slab.
Method 2: Tabling (Professional Method)
This is the classic chocolatier technique. It requires a marble slab or granite surface.
- Melt your chocolate to the temperatures listed above.
- Pour about two-thirds of the melted chocolate onto a clean, dry marble surface.
- Using a bench scraper and spatula, spread and fold the chocolate repeatedly in a figure-eight motion until it thickens and cools to:
- Dark: 80–82°F (27–28°C)
- Milk/White: 78–80°F (26–27°C)
- Return the tabled chocolate to the bowl with the remaining melted chocolate and stir to combine. The final temperature should reach the working temperatures listed in the seeding method above.
- Test and use as above.
Method 3: Microwave Tempering (Quick Option)
- Chop chocolate finely and place in a microwave-safe bowl.
- Microwave in 15–20 second bursts at 50% power, stirring thoroughly between each interval.
- Stop microwaving when about 75% of the chocolate is melted — residual heat will melt the rest as you stir.
- Monitor temperature carefully and bring to the working temperatures listed above.
- Test on parchment before using.
Tips for Success

Keep everything dry. Even a drop of water can cause chocolate to seize. Ensure all bowls, spatulas, and surfaces are completely dry.

Work in a cool room. Ideal ambient temperature is 65–68°F (18–20°C). Avoid tempering on humid days if possible.

Stir constantly. Continuous movement encourages the formation of stable cocoa butter crystals (Form V crystals — the goal of tempering).

Don't rush the cooling. Patience is the key to a good temper. Rushing by refrigerating too early can cause bloom to return.

Use a reliable thermometer. Eyeballing temperatures is the most common reason tempering fails at home.
What to Do With Re-Tempered Chocolate
Once your chocolate is properly tempered, you can:
- Pour it into molds to create bars, bonbons, or bark
- Use it for dipping strawberries, pretzels, or other confections
- Drizzle over baked goods
- Use it in ganache, sauces, or baking applications (tempering isn't required for these, but it doesn't hurt)
