What "carbon neutral" has to mean before it goes on a menu

Plenty of water brands print "eco", "green" or "sustainably sourced" on the label. None of those phrases has a definition, and none can be checked. Carbon neutral bottled water is different only when it is tied to a named certification with a public register: measure the footprint against an international standard, show reductions, then compensate for the remainder with credits that meet a recognised quality bar. Skip any of the three and you have a marketing claim.

The test for a chef is simple: can you find the producer on the certifier's website and see what the certificate covers and when it expires? If not, treat the claim like an unlabelled fish.

How Toitū carbonzero certification works

Toitū Envirocare is a New Zealand certifier whose carbon programs are accredited by JAS-ANZ, the joint accreditation body for Australia and New Zealand. Its net carbonzero mark is built on three obligations.

Measure

Organisations measure their emissions annually to ISO 14064-1:2018. For a product certification, the footprint is measured to ISO 14067:2018 and covers the product's life cycle on a cradle-to-grave or cradle-to-gate basis. That includes plant energy, packaging, freight and, for cradle-to-grave, what happens to the bottle after you empty it.

Reduce

Members must show continuous improvement to keep the certificate. Toitū's lower tier, carbonreduce, covers organisations that measure and reduce without offsetting; net carbonzero requires that work and then goes further. Antipodes' stated levers are renewable geothermal, wind and hydroelectric power and bottling to order rather than holding stock.

Offset

Whatever cannot yet be cut is compensated with carbon credits from projects registered under a standard endorsed by ICROA, the International Carbon Reduction and Offset Alliance; Toitū runs an additional assessment on each project type. The certificate must be re-audited within twelve months of the previous audit, or it lapses.

What Antipodes actually holds

Antipodes Water Company appears on the Toitū public register with two certifications: a Net Carbon Zero Product certificate for its bottled water, issued 2 December 2025 and valid to 2 December 2028, and a Net Carbon Zero Organisation certificate covering the business. The company first became carbon zero certified in 2007, which it describes as a first for a premium bottled water brand.

The last two rows are where the confusion lives. A PAS 2060 style declaration can be honest, but the company draws its own boundary and can self-certify, so you have to read the statement to know what was counted. A generic "eco" claim tells you nothing.

Glass or plastic: what the life cycle studies really say

Restaurants choose glass for the table, and Antipodes is bottled in glass only. The carbon math on packaging is more complicated than "glass good, plastic bad".

A peer-reviewed Italian life cycle assessment of mineral water bottles found that in a single-use scenario PET has the lower footprint for still water across most impact categories, and that for glass the distribution leg was more than half of the global warming impact at a delivery distance of roughly 213 km. Two variables flip the result: the number of times a glass bottle is refilled, with the study noting that 15 to 40 reuse cycles can swing the outcome in glass's favour, and distance. Glass is heavy, so how far and how efficiently it travels matters more than the material itself.

That is why a certified product footprint is more useful than a materials argument. Antipodes' product certificate already accounts for the glass and the freight, and the offsets cover what remains after reduction. Nobody is asking you to guess; the number has been measured, compensated and checked by a third party.

Carbon neutral water delivery in Massachusetts: why a local route beats parcel shipping

The last mile is the part of the journey a Boston buyer can actually influence. A case of twenty-four glass bottles sent by parcel carrier moves as an individual package through a sorting hub and onto a van optimised for hundreds of small stops, often split into two boxes with a lot of void fill. The water itself: what is in an Antipodes bottle

Antipodes is drawn from an artesian aquifer in the Bay of Plenty on New Zealand's North Island, 327 metres below the surface, beneath silica-rich ignimbrite rock. The measured age of the water at bottling is between 50 and 300 years. Because the aquifer is pressurised and protected, the water needs only a simple microfiltration before bottling; there is no sterilisation, no additives and no chemical treatment.

On the palate that is a low-mineral, neutral profile: total dissolved solids of 130 mg/L, silica the largest component at around 73 mg/L, and a neutral pH of 7.0. It will not fight a wine, and the sparkling carbonates cleanly without a mineral edge. Antipodes co-founded the Fine Water Society in 2008 with twenty other premium producers.

What happens to the glass in Massachusetts

Boston operators should know this part before promising anything to guests. Glass bottles and jars are accepted in Massachusetts curbside recycling under the state's Recycle Smart guidance, but where they end up is the issue. WBUR's 2023 reporting found that glass from the state's single-stream programs is mostly crushed for landfill cover or construction fill, the lowest-value use, because the region's bottle-to-bottle processing closed in 2018 and mixed-stream glass is too contaminated to remelt.

The exception is deposit glass. The Massachusetts Bottle Bill, in force since 1983, puts a five-cent deposit on carbonated beverages, and the state's own guidance lists sparkling water among the covered containers. Still water, juice and sports drinks are not covered; a 2014 ballot question to extend the deposit to non-carbonated drinks was defeated by more than 70 percent of voters. Deposit glass comes back clean and is the one stream that reliably becomes new bottles.

For a restaurant, that means sparkling Antipodes bottles carry a deposit and belong in the redemption stream, while still bottles go to curbside. Where you can, keep glass separate from mixed recycling, empty and rinsed, and ask your hauler about a dedicated glass pickup. Clean, colour-sorted glass has a market; crushed mixed glass does not.

Frequently asked questions

Is "carbon neutral" the same as "net zero"?

No. Carbon neutral, as certified by a program like Toitū net carbonzero, means measured emissions are reduced and the remainder is offset in the same year. Net zero is a longer-term commitment to cut emissions deeply before neutralising only the residual. A carbon neutral product can be sold today; net zero is a destination.

How can I verify that a bottled water is actually certified?

Look the producer up on the certifier's public register rather than trusting the label. Toitū lists Antipodes Water Company with certificate numbers, issue dates and expiry dates. If a brand names no certifier, or the certifier has no searchable register, the claim is not verifiable.

Is glass really better for the environment than plastic?

Only under the right conditions. Life cycle studies show single-use glass has a higher footprint than PET for still water, driven largely by transport weight, and the result reverses when bottles are reused many times or shipped short distances. For a certified product, the glass and freight are already inside the measured and offset footprint.

Do Antipodes bottles carry a deposit in Massachusetts?

The sparkling bottles do, because the Massachusetts Bottle Bill covers carbonated beverages including sparkling water at five cents per container. Still water is not covered by the deposit, so still bottles go through curbside recycling instead.
