Each vessel type has a defined role in a professional fermentation setup. A functional fermentation station in a commercial kitchen requires four things: stable ambient temperature (ideally 65–72°F for most lacto-ferments), a dedicated prep surface with drainage access, organized vessel storage, and a labeling system that tracks batch date, salt percentage, and projected pull date.
Volume planning is where most kitchens underestimate. A fermentation program that supplies even one station requires more active vessels than expected. A weekly rotation of lacto-fermented garnishes for a 50-cover restaurant typically requires 12–20 active 1L jars in various stages of fermentation simultaneously.

The recurring consumables in a fermentation program are lids and seals. Unlike jars, which are reused indefinitely, lids should be replaced each fermentation cycle for consistent seals. Buying canning lids in case quantities is standard practice for any kitchen running more than a handful of jars per week.
Other bulk sourcing priorities: non-iodized salt (iodine inhibits fermentation bacteria), glass weights for submersion, and wide-mouth funnels rated for acidic content. These are small-ticket items that create large workflow bottlenecks when they run out mid-service.
