None of those figures assume every ounce is premium glass-bottled water. Most caterers pour tap or filtered water into pitchers, and the bottled product is reserved for the moments guests notice: the ceremony welcome, the bar, and the bottle between the wine glasses at dinner. Still vs sparkling: the split that works

Sparkling is a minority preference in America. Quartz, citing Canadean market data, reported that Americans drink more than 90 litres of bottled still water per person each year against fewer than five litres of sparkling. The Caterer's UK trade figures show the same shape in a foodservice context: 66 percent of bottled water sales still, 17 percent sparkling, 17 percent cooler water.

Weddings skew more towards sparkling than those figures suggest. Guests who are not drinking alcohol reach for sparkling with a garnish because it reads as a proper drink, and a sparkling bottle on a dinner table gets opened out of curiosity. A 70/30 still-to-sparkling split is a sensible starting point for the bar and place settings. On dinner tables, where sparkling goes flat within the hour, one 1L sparkling per eight guests against one 1L still per four is enough presence without waste. For a young crowd or a zero-proof bar programme, move the bar to 60/40.

Three service formats and how much each uses

500ml at the place setting or ceremony

A single 500ml bottle per guest is the cleanest format. It sits at the place card, needs no service, and doubles as the ceremony welcome when it is iced in tubs at the back of the aisle. 1L on the dinner tables

For a plated or family-style dinner the 1L bottle is the working format.
