Regular (stabilized) peanut butter and natural peanut butter both work for baking, but they do not behave the same way. Stabilized peanut butter like Skippy contains a small amount of hydrogenated oil that keeps its fat locked in place, so it gives consistent spread, a softer crumb and a longer-lasting cookie. Natural peanut butter is just peanuts and salt, so its oil separates; if you stir it completely before weighing it performs nearly identically, and if you do not, cookies either spread into puddles or bake up dry and stunted. This guide explains why, when each one is the better choice, and how to switch a recipe from one to the other.
Both products must be at least 90 percent peanuts to be called peanut butter under the FDA standard of identity, so the difference is in the last 10 percent and in processing.

The stabilizer is the whole story for cookies. In a stabilized peanut butter the fat behaves like softened butter: it creams with sugar, holds air, and stays put in the oven long enough for the flour and egg to set. That is why the classic fork-pressed peanut butter cookie was developed around Skippy and Jif, and why most recipe writers still specify "not natural" by default.
Natural peanut butter's free oil melts sooner and faster. America's Test Kitchen tested natural peanut butter in cookie dough and found the fix is thorough stirring immediately before measuring: dough made with oil skimmed from the top of the jar spread excessively, and dough made from the dense solids at the bottom baked into hard, stunted cookies. Once the peanut butter was uniformly stirred, the sweetness difference between natural and conventional had no measurable effect on the result, and they recommended a salted natural peanut butter for seasoning.
In practice, chefs who prefer natural peanut butter's roasted flavor make two small adjustments. First, they chill the dough 30 to 60 minutes before baking to slow the spread. Second, they hold back a tablespoon of liquid per cup of peanut butter, or add 10 to 15 g of flour, because natural peanut butter carries a little more free fat into the dough.
For American buttercream, cream cheese frosting and peanut butter filling in sandwich cookies, stabilized peanut butter wins on structure. It whips lighter, pipes cleaner and does not weep oil on a warm display case. Natural peanut butter frostings taste more of peanuts but are softer, and on a summer afternoon they can develop a greasy sheen as the free oil migrates out. If you want natural flavor with stabilized structure, a 70/30 blend of natural and stabilized gives most of the roast without the weeping.
Ice cream is where natural peanut butter has a clear advantage. Once it is blended into a warm base and pasteurized, the free oil is emulsified by the milk proteins and egg, and the stabilizer in a conventional peanut butter adds nothing. The stronger roast of a natural peanut butter also reads more clearly at freezer temperature, where sweetness is muted. Run it at 8 to 10 percent of mix weight with a natural, salted peanut butter and adjust sugar down slightly if you switch from a sweetened conventional product.
For satay, dan dan and other peanut sauces, natural peanut butter is closer to the ground-peanut pastes those dishes were built on, and the lack of added sugar lets you control sweetness with palm sugar or honey. Stabilized peanut butter works but skews sweet and can give a slightly waxy mouthfeel as the sauce cools.
Going the other direction, from natural to stabilized, needs no adjustment beyond a small reduction in sugar if the result reads too sweet.
Powdered peanut butter such as PB2 is roasted peanuts pressed to remove most of the oil and then milled. It is not a one-for-one swap in baking because it brings peanut flavor without the fat, but it is useful for boosting peanut flavor in a cookie or cake without softening the crumb, and for dusting and rimming in the bar.
Yes. Stir it thoroughly before measuring and chill the dough before baking. Tests from America's Test Kitchen found that fully stirred natural peanut butter produced cookies comparable to conventional; the failures came from unstirred jars.
Almost always because the peanut butter was scooped from the top of the container, where the separated oil sits. Stir the whole container, weigh instead of measuring by volume, and chill the dough.
Creamy gives a lighter, softer crumb. Crunchy adds texture but the peanut pieces displace some of the binding paste, so the cookie is slightly drier and more crumbly. For a crunchy cookie many bakers use creamy peanut butter and fold in chopped roasted peanuts.
Not meaningfully. At roughly 2 to 3 g per two tablespoons, the sugar contribution is small relative to the sugar in a cookie or frosting formula.
