Method guide
Preservation is a matter of the right vessel for the right process. Here is how the pieces in this collection map to the techniques used in a working kitchen.
Lacto-fermentation
Vegetables, kimchi, sauerkraut and hot sauce mash held under brine at room temperature. Produce must stay submerged and gases must escape, so the jar needs a weight and a lid that vents.
What to use
Glass fermentation weights, wide-mouth mason jars, or Le Parfait Super Jars with the clamp left loose.
Water-bath canning
High-acid preserves such as jams, jellies, fruit in syrup, pickles and tomatoes with added acid. Jars are processed in boiling water and seal as they cool.
What to use
Le Parfait Jam Jars with 82mm twist lids, mason jars with ForJars lids, and preserving labels for dating.
Pressure canning
Low-acid foods, stocks, beans, meats and vegetables without added acid. Requires temperatures above boiling that only a pressure canner reaches.
What to use
ForJars 304 stainless pressure canner, mason jars, and single-use canning lid bundles.
Terrines & confit
Pâtés, rillettes, duck confit and foie gras cooked and sterilized in the jar. The classic French approach uses a straight-sided terrine with a two-piece lid that can be replaced each batch.
