Dark muscovado is unrefined cane sugar that keeps its natural molasses instead of having it spun out and added back, which is why it is darker, stickier and deeper in flavor than commercial dark brown sugar. This one is milled in Mauritius, the island whose muscovado pastry chefs and chocolatiers ask for by name. The 5 lb bag suits bakeries, chocolate shops and barbecue kitchens; the 55 lb case is the production size.

Use it where molasses depth is the point: sticky toffee pudding, gingerbread, brownies and banana bread, caramel and butterscotch sauces, barbecue rubs and glazes, rum-based cocktails and dark chocolate ganache.
