A Grand Cru from Brazil's Atlantic Rainforest. Valrhona Macaé 62% is a single-origin dark chocolate made from Brazilian cocoa grown in Bahia's Mata Atlântica, a UNESCO Biosphere Reserve, where the cocoa trees grow in the shade of banana and palm trees. It takes its name from the Macaé River in the Serra do Mar. Long post-harvest fermentation and solar drying bring out its character: fruity up front, with toasted nuts and a distinctive note of black tea.
