Every pod we ship is from the current year's crop, picked the same week it goes in your box. The best time to order is now, before harvest — pre-orders ship in the order we receive them, and the 25 lb. size in particular tends to sell out before the season ends. Once we're done harvesting and selling fresh in late October, we move to frozen, roasted, and red chile sauce for the rest of the year.

Big Jim and Charger are two of our most famous varieties and a favorite for red chile. The hearty pods are perfect for making your own red sauce or roasting and freezing. Big Jim and Charger are our two main varieties for fresh red. Both ripen on the same late-September-to-October window and ship as a mix in your order — we don't separate them by variety.
