Shipping & Delivery for a Fresh Product

Fresh chile ships on Wednesdays when harvest availability allows. Overnight is the only shipping speed offered. The Friday 4:00 PM Mountain Time cutoff determines eligibility for the following Wednesday; shipment depends on your heat level’s harvest and your place in the order queue. Check current availability on this product page.

To request a later ship week, contact us by Monday at noon Mountain Time in the scheduled ship week. We can hold an order subject to harvest availability; a requested week is not a guaranteed delivery date. There is no fee to delay a fresh-chile shipment.

Already ordered and your box has not arrived yet? Contact us if tracking shows a delay. Fresh chile ships unrefrigerated and normally arrives at outdoor temperature. Warmth alone is not spoilage, and the frozen four-hour rule does not apply to fresh chile. Report ordinary transit damage within 24 hours of delivery. We offer a replacement or refund of the affected items on every order, regardless of shipping speed or Shipping Protection. Photos of the box and affected items help document a claim, but contact us promptly even if you do not have photos. Photos are not required to start a damage or frozen warm-arrival claim. See our satisfaction guarantee.

Choosing Between Our Chile Products

If this is your first order and you're not sure which heat level you should choose: most families land on Medium (Big Jim, Charger). It's our most popular, has the classic Hatch flavor without overwhelming heat, and works in everything from green chile stew to cheeseburgers. The mildest chile we grow is the 1904 in our Mild box — it has full Hatch flavor with almost no burn, and it's the right pick for kids, mild-heat households, or anyone making chile rellenos. For deeper heat-by-variety detail, see our heat-level guide.

The difference between our fresh, frozen-roasted, and dried chile products is timing. Fresh is what's in the field that week — you do your own roasting, and you get the brightest flavor and firmest pod for rellenos. Flame-roasted frozen is the same year's crop, fire-roasted in our Hatch Valley facility within hours of picking, then frozen — best for anyone who wants ready-to-cook chile year-round. Dried red ristras and powders come from chile we let ripen past green into red on the vine. The deeper science of fresh vs. frozen vs. jarred lives on The Science of Hatch Chile.

What's Actually in the Box

A 5lb box averages 35–45 pods, a 10lb runs 70–90, and a 25lb runs 175–225 — exact count depends on pod size that week. Pods arrive whole and unroasted, with stems and seeds intact. They are not hand peeled — peeling happens after you roast. Every box is one heat level; we can't split a single box into half mild and half hot, but you can place a 5lb mild and a 5lb hot in the same checkout for a half-and-half order shipped together.

If You Need Help With Your Order

Email is the fastest way to reach our family — we answer every message ourselves, usually same day. You can also leave a review on this page using the review widget below your last order, and we read every one. We are not related to any other company that uses "Hatch" in its name; the Hatch Chile Association certifies that what's in your box was grown in the Hatch Valley by us, not relabeled from another region. (See Hatch Chile vs. Anaheim and Not affiliated for the full story.)

Frequently asked questions

Can you hold my order until [date], or delay my shipment to a specific week?

To request a later ship week, contact us by Monday at noon Mountain Time in the scheduled ship week. We can hold an order subject to harvest availability; a requested week is not a guaranteed delivery date. There is no fee to delay a fresh-chile shipment.

Can I upgrade to overnight shipping, or change the shipping method on my order?

Overnight is the only shipping speed offered for fresh chile. Contact us before Monday at noon Mountain Time in the ship week if you need help changing your order.

Can I order half mild and half hot in a 10-pound box?

We can't split a single 5lb or 10lb box across two heat levels — each box is packed and labeled as one heat level. If you want a half-mild / half-hot split, place two 5lb orders (one mild, one hot) in the same checkout and we'll ship them together in one harvest-day shipment.

Will my order spoil if there's a shipping delay, and what if it arrives spoiled?

If your fresh chile is delayed in transit, contact us for help. For a quality issue discovered after a sound delivery, contact us within 7 days. See our satisfaction guarantee.

Are you harvesting green chiles now, and is there a shortage this year?

Typical fresh Hatch chile harvest runs from late July into October, depending on weather. Actual order availability and shipment timing vary through the season. Check this product page for the current availability notice and expected Wednesday ship date. Our frozen roasted chile is available year-round.

Are the dried ristras you sell edible?

Some of them, yes. We sell two ristra options — an Edible (Not Treated) version that's pure sun-dried Sandia chile and can be cooked with, and a Not Edible (Treated) version dipped in clear lacquer for longer-lasting display. The treated ones aren't food-safe; the untreated ones are. Full details on the ristra PDP.

Prefer it jarred? Try our Hatch green chile salsa and sauces.

Very Happy with our Order.

Very satisfied! Every chile in the box was perfect, firm and very meaty, and "hot" just as we ordered it. We're thankful that we now have a source for getting delicious NM chiles!
