Valrhona Inspiration Matcha is a green tea couverture made with cocoa butter and real matcha, with a natural taste and color and no artificial colors or flavors. Expect a vivid green color, vegetal notes, and a subtle bitterness balanced by gentle sweetness. It is part of Valrhona's Inspiration range, which won the SIRHA 2017 Grand Prix for Innovation, and comes as fèves (small discs) that melt evenly and are easy to weigh.

Best uses

• Recommended for: moulding, bars, mousses, crémeux, and ganache
• Not recommended for: coating, ice creams, and sorbets
