Shipping & Delivery for a Fresh Product

Fresh chile ships on Wednesdays when harvest availability allows. It ships overnight: choose Overnight Saver or Overnight at checkout, both 1 business day. The Friday 4:00 PM Mountain Time cutoff determines eligibility for the following Wednesday; shipment depends on your heat level’s harvest and your place in the order queue. Check current availability on this product page.

Already ordered and your box has not arrived yet? Contact us if tracking shows a delay. Fresh chile ships unrefrigerated and normally arrives at outdoor temperature. Warmth alone is not spoilage. If fresh chile arrives spoiled or damaged, tell us within 4 hours of the carrier's delivery scan and send photos. Report ordinary transit damage within 24 hours of delivery, including frozen food that arrives cold but crushed or split (within 4 hours of the carrier's delivery scan for fresh chile and for frozen food that arrives warm). We offer a replacement or refund of the affected items on every order, regardless of shipping speed or Shipping Protection. Please send photos of the box and the affected items as they arrived. We need them to file a damage, spoilage or warm-arrival claim. See our satisfaction guarantee.

Choosing Between Our Chile Products

If this is your first order or you're not sure how much heat you like, start with Mild: fresh and frozen chile can't be returned or exchanged if the heat isn't for you. Medium (Big Jim or Charger) is our most popular if you already enjoy some kick — the classic Hatch flavor, and it works in everything from green chile stew to cheeseburgers. The mildest chile our family grows is the 1904 in our Mild box — it has full Hatch flavor with almost no burn, and it's the right pick for kids, mild-heat households, or anyone making chile rellenos. For deeper heat-by-variety detail, see our heat-level guide.

The difference between our fresh, frozen-roasted, and dried chile products is timing. Fresh is what's in the field that week — you do your own roasting, and you get the brightest flavor and firmest pod for rellenos. Flame-roasted frozen is fire-roasted soon after picking and then frozen (most of our frozen stock is the current year's crop; the year is on each bag) — best for anyone who wants ready-to-cook chile year-round. Dried red ristras and red chile powder come from chile we let ripen past green into red on the vine. The deeper science of fresh vs. frozen vs. jarred lives on The Science of Hatch Chile.

What's Actually in the Box

A 5 lb box holds about 25 to 45 pods, a 10 lb about 50 to 90, and a 25 lb about 125 to 225, depending on pod size that week. Pods arrive whole and unroasted, with stems and seeds intact. They are not hand peeled — peeling happens after you roast. Every box is one heat level; we can't split a single box into half mild and half hot, but you can order a 5lb box of each heat; each heat ships when its harvest is ready, so they may arrive on different days.

If You Need Help With Your Order

For anything urgent, like a damaged or spoiled box, call 575-267-2067 (8am–5pm MT, Monday–Friday) or chat with us; we reply to most email within one business day. You can also leave a review on this page using the review widget below your last order, and we read every one. We are not related to any other company that uses "Hatch" in its name; the Hatch Chile Association certifies that what's in your box was grown in the Hatch Valley by us, not relabeled from another region. (See Hatch Chile vs. Anaheim and Not affiliated for the full story.)

Frequently asked questions

Can you hold my order until [date], or delay my shipment to a specific week?

Not for the rest of the 2026 season: fresh chile, green or red, ships as soon as it's ready, and we can't hold it or move it to a later week. Frozen and pantry orders can still be held.

Can I upgrade to overnight shipping, or change the shipping method on my order?

Fresh chile always ships overnight; at checkout you choose Overnight Saver or Overnight, both 1 business day. Contact us before Monday at noon Mountain Time in the ship week if you need help changing your order.

Can I order half mild and half hot in a 10-pound box?

We can't split a single 5lb or 10lb box across two heat levels — each box is packed and labeled as one heat level. If you want a half-mild / half-hot split, place a 5lb order of each heat; each heat ships when its harvest is ready, so they may arrive on different days.

Will my order spoil if there's a shipping delay, and what if it arrives spoiled?

If your fresh chile is delayed in transit, contact us for help. For a quality issue discovered after a sound delivery, contact us within 7 days. Taste and heat-level preference on chile that arrived as labeled aren't covered, because our varieties change so much from year to year and field to field. See our satisfaction guarantee.

Are you harvesting green chiles now, and is there a shortage this year?

Typical fresh Hatch chile harvest runs from late July into October, depending on weather. Actual order availability and shipment timing vary through the season. Check this product page for the current availability notice and expected Wednesday ship date. Our frozen roasted chile is available year-round, and fresh pre-orders for the 2027 season open in January 2027.

Are the dried ristras you sell edible?

Some of them, yes. We sell two ristra options — an Edible (Not Treated) version that's pure sun-dried Sandia chile and can be cooked with, and a Not Edible (Treated) version sprayed with a clear coating for longer-lasting display. The treated ones aren't food-safe; the untreated ones are. Full details on the ristra PDP.

Very Happy with our Order.

Very satisfied! Every chile in the box was perfect, firm and very meaty, and "hot" just as we ordered it. We're thankful that we now have a source for getting delicious NM chiles!

What they made: The recipient takes the peppers and stuff some with cheese then wraps in them and bacon. Myself I eat the extra hot red and green chili out of hatch Frozen. I just love them chili cheeseburgers.
Always a hit

I buy them as a gift for a person that has just about everything. It is always a hit. Before I started giving the peppers he was stuffing his jalapeno peppers. My only complaint is I DON'T GET ANY but I can go anywhere in the state and get a green chili cheeseburger. So I'm happy

What they made: We make enchiladas, cheese dip, pinto beans, green chilies stew, spaghetti, breakfast burritos, the list goes on.
My husband is from New Mexico

My husband is from New Mexico, born and raised. We have since moved to San Diego, now Maui,HI, but every year we roast roast a bushel of chilies.
We were very pleased with the chilies form your company. They arrived fresh, on time, and not one bad chili in the bunch.
