Traditional New Mexican Red Chile Pork Tamales! Pork is a classic component of Southwest cuisine, and once you throw in some Hatch Red Chile, you've got a taste of New Mexico that you can't get enough of. According to tradition, these tamales contain shredded pork.
We use an authentic New Mexican recipe for our tamales. Fluffy masa made with maseca (corn treated with hydrated lime) and wheat flour is stuffed with shredded smoked pork drenched in a Hatch Red Chile sauce. Each tamale is wrapped in parchment paper and then steamed to perfection. Once steamed, these tamales will melt in your mouth. All of our tamales are handmade in small batches to ensure top-notch quality.

Sold by the dozen — 12 tamales per bag. Cook directly from frozen to 160°F, leaving the parchment paper on while heating (remove it before eating):
Steam: Steam from frozen for 30–40 minutes in a steamer basket over simmering water for the best texture.
Microwave: Wrap 2 frozen tamales in a damp paper towel and microwave on high for 2 minutes.
Oven: Heat from frozen at 350°F for 25–30 minutes, covered with foil.
