Fresh chile ships on Wednesdays when harvest and current availability allow. Harvest typically runs from late July into October, depending on weather. Check the expected ship date on this product page. Overnight is recommended and is the only speed we guarantee; 2-Day Air is also offered.

Need it by a specific date, or want to delay until later in the season? Place your order whenever you like, then reply to your order confirmation with the week you want. We can hold your order until any Wednesday in the harvest window, or change your pick date if your plans shift. There's no fee to delay a fresh-chile shipment, and we'll send you tracking the morning your box leaves the field.

If this is your first order and you're not sure which heat level you should choose: most families land on Medium (Big Jim, Charger). It's our most popular, has the classic Hatch flavor without overwhelming heat, and works in everything from green chile stew to cheeseburgers. The mildest chile we grow is the 1904 in our Mild box — it has full Hatch flavor with almost no burn, and it's the right pick for kids, mild-heat households, or anyone making chile rellenos. Fresh is what's in the field that week — you do your own roasting, and you get the brightest flavor and firmest pod for rellenos. What's Actually in the Box

A 5lb box averages 35–45 pods, a 10lb runs 70–90, and a 25lb runs 175–225 — exact count depends on pod size that week. Pods arrive whole and unroasted, with stems and seeds intact. They are not hand peeled — peeling happens after you roast. Every box is one heat level; we can't split a single box into half mild and half hot, but you can place a 5lb mild and a 5lb hot in the same checkout for a half-and-half order shipped together.

Can I order half mild and half hot in a 10-pound box?

We can't split a single 5lb or 10lb box across two heat levels — each box is packed and labeled as one heat level. If you want a half-mild / half-hot split, place two 5lb orders (one mild, one hot) in the same checkout and we'll ship them together in one harvest-day shipment.

Will my order spoil if there's a shipping delay, and what if it arrives spoiled?

If your fresh chile is delayed in transit, contact us for help. Report arrival-condition issues such as thawed, damaged, or spoiled items with photos within 4 hours of delivery. Are the dried ristras you sell edible?

Some of them, yes. We sell two ristra options — an Edible (Not Treated) version that's pure sun-dried Sandia chile and can be cooked with, and a Not Edible (Treated) version dipped in clear lacquer for longer-lasting display.
