Fresh Hatch Red Chile

Every pod we ship is from the current year's crop, picked the same week it goes in your box. Availability changes with the harvest, and the 25 lb. size in particular can sell out before the season ends. Check the current product options before ordering. Once we're done harvesting and selling fresh in late October, we move to frozen, roasted, and red chile sauce for the rest of the year.

Big Jim and Charger are two of our most famous varieties and a favorite for red chile. The hearty pods are perfect for making your own red sauce or roasting and freezing. When are specific varieties like Big Jim available?
Fresh red is Medium heat, grown from Big Jim and Charger, which ripen in the same late-September-to-October window. Which variety you get — or a mix of both — depends on what is ripe the day we pick and ship, so we can't say ahead of time, and we don't separate them by variety.
