Kyolic Formula 102 addresses two separate systems: the antifungal properties of Aged Garlic Extract for candida balance, and a broad-spectrum digestive enzyme blend for everyday digestive function. The chemistry behind Kyolic's cold-aging process matters: fresh garlic contains alliin and the enzyme alliinase, which upon crushing produce allicin — a potent but unstable compound that quickly degrades. During Kyolic's 20-month cold-aging in stainless steel containers, allicin converts into stable, water-soluble organosulfur compounds not found in raw garlic — primarily S-allylcysteine (SAC) and S-allylmercaptocysteine (SAMC). SAC is the most studied of Kyolic's unique compounds: it activates Nrf2 (Nuclear factor erythroid 2–related factor 2), a master transcription factor that upregulates the body's endogenous antioxidant enzymes (superoxide dismutase, catalase, glutathione peroxidase). Research shows SAC and related sulfur compounds also inhibit ergosterol synthesis in fungal cell membranes — the mechanism by which they disrupt Candida's membrane integrity.
