Pan's Mushroom Jerky is made from whole shiitake mushrooms sliced and low-temperature dehydrated — not extruded, reconstituted, or reformed like most plant-based meat alternatives. Shiitake (Lentinula edodes) have an intrinsically meaty, chewy texture when dried because of their dense, fibrous cell walls and high glutamate content — glutamate is the amino acid responsible for umami, the savory "fifth taste." Shiitake are also one of the few food sources of lentinan, a beta-1,3/1,6-glucan polysaccharide studied for its immunomodulatory properties (it activates macrophages and natural killer cells without overstimulating the immune system). Eritadenine — an adenosine analog naturally present in shiitake — has been studied for its ability to support healthy cholesterol metabolism.
