Pines International harvests barley grass (Hordeum vulgare young shoots) at the jointing stage — the brief window before the plant develops grain, when chlorophyll, enzyme, and nutrient density peak. Like wheatgrass, barley grass is exceptionally high in chlorophyll (structurally similar to hemoglobin, with magnesium at the porphyrin center instead of iron) and contains superoxide dismutase (SOD), a key enzymatic antioxidant. But barley grass also contains two unique flavonoids not found in other grasses: lutonarin (2"-O-GIV) and saponarin (7-O-GIV) — barley-specific flavone glucosides with particularly potent antioxidant activity studied for cellular protection against oxidative stress. Barley grass also provides naturally occurring GABA (gamma-aminobutyric acid), high potassium, iron, calcium, and a broad spectrum of vitamins including C, K, and the full B complex.
