Chickpeas (Cicer arietinum) are nutritionally distinct from most snack ingredients: they contain roughly 19–20g of protein per 100g dried, 17g of fiber (including resistant starch), and a remarkably low glycemic index of approximately 28 — meaning blood glucose rises slowly and steadily compared to most snack foods. The resistant starch in chickpeas resists digestion in the small intestine and reaches the colon largely intact, where Bifidobacterium and other beneficial bacteria ferment it into short-chain fatty acids (butyrate, propionate, acetate). Saponins in the chickpea seed coat have demonstrated cholesterol-binding activity in vitro. Saffron Road air-roasts chickpeas rather than deep-frying them — which means minimal oil uptake and no high-temperature oxidation of polyunsaturated fats.
