Cocoa powder fat content is the number pair printed on the bag: 22/24 means the powder holds 22 to 24 percent cocoa butter, and 10/12 means 10 to 12 percent. Everything else in the sack is non-fat cocoa solids, and a large share of that is starch. That one difference decides most of what you notice in the finished product. The high-fat grade bakes moister, tastes rounder and carries chocolate flavor longer on the palate; the low-fat grade gives a sharper, more direct cocoa hit, blends dry without clumping into other fats, and costs less per pound. Which one belongs in your formula depends mostly on whether the recipe is already carrying fat from somewhere else. Below is what the numbers mean, what cocoa butter actually does in a bake, a side-by-side of the two grades, and what changes application by application.

Cocoa powder is what remains after cocoa butter is pressed out of cocoa liquor, and the bean is roughly half fat to begin with. The liquor goes into a hydraulic press, the cocoa butter runs off and is sold separately, and the pressed cake is milled into powder. The harder and longer the press runs, the less fat stays behind. Standardizing to 10 to 12 percent takes a more intensive pressing than stopping at 22 to 24 percent; Bolmay Cocoa notes that taking a press cake from about 20 percent fat down to about 11 percent can take twice as long, and that conventional pressing cannot practically get below 5 to 9 percent fat. So the grade is a manufacturing choice, and the cocoa butter that comes out of the low-fat grade has value of its own, which is why 10/12 costs less per pound than 22/24 from the same maker.
The fat grade is independent of alkalization. Bensdorp makes both a 22/24 Dutch-processed cocoa and a 10/12 Dutch-processed cocoa; Tulip's natural cocoa is 10/12 and not alkalized at all. Dutch processing raises the pH (Gerkens lists 6.8 to 7.2 for its Aristocrat DP70; black cocoa runs 8 to 9), which darkens the color and mellows the acidity, but it does not add or remove cocoa butter. America's Test Kitchen put it plainly: the less fat a cocoa powder has, the more starch it contains, and starch is very absorbent, able to soak up its own weight in water. In a chocolate cake, a 10/12 cocoa is pulling moisture out of the crumb that a 22/24 cocoa leaves alone. That is why ATK recommends a cocoa around 20 percent fat for a moist, tender chocolate dessert, which on a retail label works out to at least 1 gram of fat per 5 gram serving.
The second job is flavor delivery. Cocoa butter is a carrier for the volatile aromatic compounds in cocoa, so a high-fat powder delivers what Nutrisi Kakao describes as a more profound, lingering chocolate impact and rounds off harsh notes, while a low-fat powder gives a sharper, more direct cocoa hit. Solid Cocoa's comparison lands in the same place: richer, rounder flavor and a smoother, more luxurious mouthfeel from the high-fat grade. The third job is texture. High-fat cocoa noticeably improves moisture retention and produces denser, fudgier results; low-fat cocoa has a very fine, dry consistency that is prone to clumping when it meets liquid but blends cleanly into dry mixes and fat-based systems.
The arithmetic is small but real. Swapping 10/12 for 22/24 in a formula adds roughly 11 grams of cocoa butter per 100 grams of cocoa powder and removes about the same weight of non-fat solids. In a brownie carrying 100 grams of cocoa, that is 11 grams more fat and 11 grams less starch in the batter, which is enough to move the crumb from cakey toward fudgy without touching the butter line.

One rule covers most of it: if the formula already carries fat from butter, cream, oil or a coating fat, a 10/12 cocoa will not be missed. If the cocoa is the chocolate in the recipe, buy the 22/24.
On the high-fat side, Bensdorp 22/24 DP Royal Dutch is the deep red-brown Barry Callebaut cocoa that pastry kitchens standardize on, packed in 50 lb sacks. Gerkens Aristocrat DP70, Cargill's Dutch-processed cocoa from Holland, is also 22 to 24 percent, medium red-brown, pH 6.8 to 7.2, with a 36-month shelf life when stored at 18 to 22°C and no more than 50 percent relative humidity; it comes in 50 lb and 5 lb bags and is the substitute we point customers to when Bensdorp is on pre-order. Callebaut Extra Brute is a 22 to 24 percent alkalized cocoa milled extra fine, sold by the kilo and the six-kilo case. Cacao Barry Plein Arôme is the same 22 to 24 percent grade with a darker, more fragrant profile. Valrhona cocoa powder sits just below at 20 to 22 percent, Dutch-processed, with a very fine particle size that dissolves cleanly into ganache and batters, in 3 kg boxes and 25 kg bags.
On the low-fat side, Tulip natural cocoa 10/12 is the un-alkalized option, with the acidity that natural cocoa brings, in 50 lb and 5 lb sizes. Bensdorp 10/12 MGM is the Dutch-processed 10/12 for formulas and dry mixes that want the low-fat grade with Dutch color. Black cocoa is low fat and heavily alkalized, made for Oreo-style cookies and devil's food color, and best blended rather than used straight. For dusting in a humid pastry kitchen, Cacao Noel Cocoa-Sec is a special-order humidity-proof cocoa with a high cocoa butter content.
The 50 lb sack is the cost-efficient unit for a production bakery, and cocoa keeps: Gerkens rates its powder for 36 months in a cool, dry room, and that rule of thumb holds for the category. Store it sealed, below about 72°F, away from strong odors, because cocoa butter picks up aromas and the powder picks up humidity. If you run both grades, label the bins. A 10/12 and a 22/24 look nearly identical in the scoop and behave very differently in the mixer.
If you are moving a formula from one grade to the other, change nothing else on the first batch and bake it side by side with the old one. The difference in fat is about 11 grams per 100 grams of cocoa, which is easy to see in a brownie and easy to miss in a devil's food cake carrying a cup of oil. Only then adjust the butter or oil line, and only if the crumb tells you to.
The powder contains 22 to 24 percent cocoa butter by weight, left behind after pressing. A 10/12 cocoa contains 10 to 12 percent. The rest is non-fat cocoa solids.
For flavor, moisture and mouthfeel in scratch baking, ganache, ice cream and drinking chocolate, yes. For dry mixes, compound coatings and high-volume production where other fats are present, 10/12 does the job at a lower cost.
